RECIPES: HOW TO MAKE CONCOCTION RICE


On ash Wednesday (last week wednesday) i had to make a meal with fish (i was raised catholic and we don't eat meat on certain days, ash wednesday inclusive). My Choice of food to cook was simple, concoction rice, very local flavour, very enjoyable meal. I first learnt about it when my cousin sent the recipe to me and i love it so much that since then i've made it every other week.



Anyway long story short what do you need for the recipe?

Rice (as desired)
Palm oil
Stockfish
Smoked Titus
Onions
Crayfish (ground)
Stock cubes (i used knorr crayfish)
Fresh or dry pepper
Salt
Scent leaves

How to Cook:

Clean and cut fish into small pieces

Parboil Rice
Dice Onions
Blend pepper ( if fresh)
Wash your Vegetables

Put the fish pieces (stock fish and others) in a big pot, add the onions and stock cubes, add just enough
water to cover the ingredients and cook until the stockfish is soft.

Add Pepper, crayfish and Palmoil, ensure that the water is at the same level with the things in the pot and cook for about 5 minutes

add the parboiled rice, check water level again it must be just enough to level with the rice

add vegetables, taste and salt as desired , then cover to cook
Once it is dry it is ready to eat!

I served the cooked rice with Titus fish this time
but you may serve it with plantain and chicken, or any other type of meat
