FOOD: THE HEALTH BENEFITS OF CORN (MAIZE)

I've been craving corn literally all year (yes all 3 months). Its just weird how we often crave those things that we simply can't get (absence does make the heart grow fonder). So yes i've been craving corn all year and i was so so excited to finally see corn about a week ago, at the bus stop leading to my house. I was so happy that i stopped and went to the vendor ( a nursing mother, this detail would become relevant shortly). The fact that she had burnt the corn cobs to black perfection did not deter me in the least, i bought my corn and headed home.

Yesterday again, i woke up wanting corn, but each time i stepped out she was no where in sight. As the hours passed i began to feel like my happiness was dependent on getting the corn and eventually i went out to just roam around and see if i would find any other vendors. My journey was unsuccessful, i even ended up in traffic but when i returned to my bus stop she was there!!!

I walked up to her and picked the corn while she searched for paper to wrap it in and that was when it happened. You see, she had been breastfeeding her baby and he suddenly puked all over. Needless to say i went home a very unsatisfied customer.

You may be wondering what's so fascinating about corn and so i'm about to share with you the health benefits that you can derive from eating corn.

  1. A single medium sized corn cob provides over 10% of our daily requirement for dietary fiber
  2. Dietary fiber in a healthy diet helps to reduce blood cholesterol levels and may lower one's risk of heart disease.
  3. Insoluble fiber helps prevent constipation and reduce the risk of hemorrhoids
  4. It may help to curb appetites and assist with weight management.
  5. It helps to reduce the risk of Type 2 diabetes.
  6. Healthier eyes.
  7. May help prevent hardening of the arteries which can lead to heart attack and stroke.
  8. It contains Beta-cryptoxanthin which may help in slowing bone loss associated with aging, reducing the risk of diseases like arthritis as well as various forms of cancer.
  9. It significantly reduces the risk of neural tube birth defects when eaten by pregnant women.
  10. It supports Cardiovascular health

You can boil or roast corn and even add it to your meals in form of vegetables. So the next time you see corn on sale, you know what to do.
